I was wondering how long do hard boiled eggs, in the shell, can be safely kept in refrigerator, and are edible.

I'd be guessing a week, as far as them being edible depends on how long you have cooked them.
A week, I believe. But it wouldn't hurt to err on 4 or 5 days.
Personally I'd only go a day or two but I had salmonella once so I'm a bit paranoid about things like that.
They will keep for quite some time. I've had them in the fridge for over a week. You can always pickle them in white vinegar, then they will keep for as long as you like.

Oh yes, pickled eggs are to die for. Don't have to be kept in the fridge neither.

In white vinegar they are wonderful. Can then be used in salads, sliced in sarnies, with chips or whatever your culinary imagination can come up with.
Can't recall ever having pickled eggs, not an Aussie thing I guess.
I shall do some in the future, my family will probably be up in arms over it.

oz, hard boiled, shelled, in sealed jars in white vinegar. Leave for at least four months, preferably six. They will keep for years if the jar is sealed.
At one time they were a popular bar snack in pubs; not so much these days though.
You're right Jack. But most pubs now do 'proper' food, that's why.
Nothing improper about pickled eggs - delicious.

I have noticed one interesting feature - every time I buy any the checkout person makes a comment about them - weird ?
They still make and sell pickled eggs in the bar I go to. They go for $1 (53p) each. One bartender, when someone orders some, always says "Oh no! Are you really sure you want pickled eggs?". Jokingly off course: I guess she can't stand the smell of them. You've got me wanting to make some now:)
I seem to remember that pickled eggs have a reputation for producing a lot of smelly wind.
