Salmon And Stir Fry

We're having the above tonight.
The salmon will be cooked separately, kept as a whole piece and not flaked into the stirfry. I'm just looking for some inspiration for a tasty 'sauce' to chuck in the stirfry that will go with/compliment the salmon...any ideas?

Poach the salmon in champagne or a nice Cava or other good white wine.
I did this on Monday and used a sweet chilli sauce in the stir fry. Gave it s bit of zing.
Are you using noodles or something similar?

What I often do, and the whole household love, I fry some fresh ginger, chilli and garlic. Add some stock (I just use a veg stock cube) some soy sauce and brown sugar and simmer. Then add veg. I think doing it as a stir fry would work just as well.

Cook some noodles and add to individual bowls, spoon the stock and veg over and place the salmon fillet on top.
I'd go with.....

11/2 tbs Soy sauce
Scant tsp grated ginger
1 small garlic clove, minced/grated/crushed
Juice 1/2 lime
Finely chopped red chilli to taste
A touch of sesame oil....if you have some
A tbs sesame seeds ....if you have some
A touch of honey or soft brown sugar if it tastes a bit too tart


Whisk it all together and pour over the stir fry towards the end.

Serve up the stir fry and salmon, leaving the residual sauce to reduce a little. Pour the reduce sauce over and sprinkle over a few more sesame seeds....if you have them....
Do stir-fry sauces always have to be sweet? I would love to try one but all the ready-made sauces are sweet and I really don't like sweet on my savoury (although I don't mind savoury on my sweet...). I tried a ready-made sauce once, I think it was just soy, but even that was too sweet. Now I've said sweet too many times.
MIsky- Chilli sauce if you want a bite.
Black Bean-based sauces are pretty tasty, and go well with quite a lot I think.

Am giving a combination of ummmms and eccles's a go. Hadn't thought of black bean with salmon Jim, I do like black bean sauce so why not?

Well, it was delicious. We had noodles and I did it more or less as Ummmm suggested (I hadn't thought of noodles) with the addition of lime juice. It was very light but tasty. Yum :)

I watch cooking programmes and will try things I look the look of. 9 times out of 10 they turn out well.

I'm a bit the same, although I have to be in the mood, sometimes it's just too much faff. After the afternoon I've had I surprised myself by enjoying all the prep and cooking, sometimes I find it's a good way of relaxing and switching off. The wine helps too :)
It's the washing up that I hate. My dishwasher has broken :-( I didn't realise how plates were used until I had to start washing up.
