Any Knitters Out There?

I join shoulder seams by leaving stitches on holders, transferring to two needles,then casting them off together; has anyone tried picking up stitches from row ends,and casting back and front off together thus getting flat seam? I'm using chunky wool and think it would be tidier than stitching up, though I am a very neat stitcher?

I just join seams with mattress stitch, I mainly make toys though and invisible seams are a must.

Think I've done that in the past without knowing it is mattress stitch,which I googled, as its chunky wool it will be easy to see what I'm doing. Thankyou girls.
