I have some Muslim friends coming for dinner.. I know they are not allowed alcohol, but am I ok to cook with some wine.. My theory.. The alcohol burns away..? Sorry if this is in the wrong part!!

Not all alcohol evaporates with cooking ? I can not claim otherwise for I do not know, but I do know the human body creates it's own so such rules are illogical. Still, if you do not want to risk offence, best leave it out.
If you do not want to cause offence revoke your invitation.

The number of things from which Muslims can take offence are so many and varied (and very often totally illogical) that it is best to steer clear of the minefield entirely.

Your quandry demonstrates perfectly why "multiculturalism" is a nonsense. Non Muslims cannot possibly be expected to know of all the foibles from which Muslims suffer. Since, in the UK, giving offence to somebody runs a very close second only to murder in the list of the most heinous crimes imaginable, best to give such a possibility a wide berth.
If they are good friends, you could ask them, otherwise i would be on the safe side and not include the alcohol. Its not so much the facts of the case as what they believe. I would ignore New Judge who appears to have got out of the wrong side of the bed today.
Or you could just ask them. Revoking the invitation seems a bit OTT.
