How long can fresh yeast be kept and still be useable? Should it be in the fridge of the freezer? Many thanks.

Fresh yeast is highly perishable. Should it be kept in the fridge, it will need to be used within a few days. It can be frozen, but you must wrap it tight so not to let the air and moisture get to it. It'll keep ok for a few months, I would have thought.

My wife says it's OK for a month in the freezer, but about 3 days in the fridge. She bakes all her own bread, by the way.

Frozen yeast loses some of its strength, so you need more than the recipe states when you defrost it. I reckon about a quarter to a third more.

Good morning folks and thank you. So it is back to the shop as I have had the yeast for a week or longer. Tesco give it away so nothing lost really. Only time!!!
