I upgraded my iPad yesterday and can anyone please tell me how I can get rid of that annoying reading pane tha now takes up a third of my screen.

Go to Settings > Mails, Contacts & Calendars > Preview > None. Following this you will get rid of Preview pane.

If you mean in Safari, just click on the open book icon next to the address box

Can anyone tell me why my iPad is now so slow and prone to freezing since upgrading it?
What version are you on?

8 was bad, 8.01 was pulled, 8.02 supposedly fixed some things

Now 8.1 is out.

I found Safari was affected, but I have other broswers that I use.
8.0.2 and it's dreadful. I'm using safari though, so I'll try another browser. Thank you Tuvok.

My ipad2 was slow after upgrading to iOS 8.02 but I found on a forum. To close all apps by pressing the home key twice. Then open safari open approx 6 different sites/pages pinch them in and they become 6 small windows then tap one of them and it should speed up. It does work. I told a friend and he also agreed.
