If i wanted to make something like a dish that i would think is very specific to me and no one could make it like that, and wanted to sell it in bulk to cafes, takeaways, shops etc, how would i start??

what do i need in terms of it being all above board? How could i convince these places to trust me when i take samples in?

What is your best thing? Is it sweet? Savoury?
Bigger supplier would have economies of scale. Could you match them on price?
If You run food premises you have to be able to prove where your goods come from. So if you are selling to such premises you would need to be registered with Enviromental Health. You would need to prove that your Hygeine standards are up to scratch and also your transport arrangements are adequate. You basically need to make yourself bomb proof should any of your products cause food poisoning to anyone.
