My Attempt At Stock Isn't Working..

I use an uncooked chicken carcass after butchering it properly. It's been simmering for hours and strained then resimmered and is still a big watery tasteless mass. Please help!

What else did you put in it, apart from chicken and water?

sorry, more answers after that last one about reducing it. I put in celery, herbs and garlic.
My mother used to cook the chicken, THEN render the carcass for stock.
You would have been better off using a cooked carcass...more flavour to start with. Add carrots,onions and celery if you wantg to use as a soup base. Season well.
Sounds about right, but you'll have to let it cool before you get any 'thickening' ... Let it set first
I agree, I didn't spot that it was raw when you started.

Its too late for this time but roasting the bones before making the stock gives a better flavour. For now, boil the stock to reduce it, one chicken carcass wont't make a lot of stock.

The water was to cover the carcass when chopped up plus vegetables. How thick do I need to leave it to get to?

Ah, leave it to cool then see?
Reduce the liquid by half...the flavour will be more concentrated.
Just in case, it won't reduce if you have the lid on your pot

It's been cooked and reduced, and left to cool in a nice bowl. Hope it works lol or will be using Knorr in future ha ha
I went in my local co op and asked for some hyena Oxo cubes and was made to feel a total laughing stock at the checkout...
