I've got a large chicken which I want to roast with a big pan of roast veg. I have butternut squash, parsnips, carrots and potatoes. How would you do it? I had thought of just throwing them all in the roasting pan and sitting the chicken on top, but would that work? Help please?

When I last tried to roast veg it didn't go too well. More dried & wrinkley than roast. So probably need to ensure sufficient oil. I think I'd use separate pans, easier to see to chicken and veg without one getting in the way of the other.
I agree, unless you want a casseroley sort of effect with mushy veg, oil the veg and put them in the oven separately. Since they are all root veg except for the squash, I'd be tempted to parboil them first, too.

Thanks both.
Par boil veg, drain & add to last 20mins of chkn roasting tin. N.b. sprinkle sugar on veg in baking tin to give crunch.
Just a pinch of sugar ;)
... or honey adds a good flavour too, especially to the parsnips.
Maybe it was the par boiling I got wrong last time :-(
