Quite often my local Co-op has lots of stuff left over and sell it very cheap. They currently have some really good mature cheese, but I am afraid it might go off in the fridge. Is it possible to successfully freeze cheddar ?
Considering some chesses are matured for years I wouldn't worry about it going off. The reason cheese goes mouldy is because of the bacteria we transfer to it by touching it. If you keep it in its wrapper it'll be fine.
You may find with a few cheddars that after freezing, they have developed slight orange-coloured patches. These are simply accumulations of yeasts. They are totally harmless, and won't affect the flavour.
