why do cakes such as VICTORIA SPONGE BECOM VERY STICKY ON THE TOP AFTER BAKING?

I cool cakes on a wire rack, and just to let you know I do weigh out ingredients
Mine seem to do that as well.
Isn't it something to do with the sugar rising ?
Could be. It only does it with sponges with me not other cakes. Maybe not beaten enough.
Anyone tried to make that 'ladybird cake' off the adverts?

I think this is the stickiest of questions which I have encountered in the Technology section of AB.

Anyway, I have done a bit of research and can assure you that you Do Not have a Virus in your computer or, for that matter, in your oven; be it gas or electric.

It would appear to be the case that the beating of ingredients is most important.

Incidentally, whilst i think that you were right to give ColinandJess 'best answer' I think it should have been for her last one ...."You need to cream your butter and sugar until it's almost white that should stop the top going sticky.".
