I now a nurse is one of the people who can counter sign a passport, but does it have to be someone who is currently working as a nurse? Thanks.

I get my local shop keeper or the pub landlord to do mine :-)

I think it would be fine Sher. I have countersigned a few passports and i'm sure the checks run the applicant and the counters names through the system and providing nothing comes up, it goes through fine.
Here's the internal document which passport staff must refer to:
https://www.gov.uk/government/uploads/system/uploads/attachment_data/file/118585/countersignatories.pdf

You'll see that it says: "NOTE: An unemployed person who has appropriate credentials is not precluded from countersigning an application".
i.e. it's checkable qualifications that are relevant, not the current occupation (or lack of it) of the person. (I've countersigned passport applications, on the basis of my teaching qualifications, since leaving the profession. Similarly Sherrardk, for example, could also do so).
