Can somebody enlighten me as to the correct pronunciation of the above Warwickshire house? There are so many different ways of pronouncing the 'ough' combination of letters in our language.

According to my Oxford English Dictionary the pronunciation of "hough" as "Hock" is only a local scottish pronunciation. The OED definitions of "hough" refer only to part of the leg, not wine.
My OED is the original 4,115 page edition.

The name Coughton (pronounced "Coat-un") suggests a settlement or farm known for the hunting of woodcock or game birds.

That specific Estate's name has always traditionally been pronounced "COFF-ton Court". I've lived not far away for most of my life, and have never heard it pronounced any different except by strangers.
