Roast beef

Have a 2.5kg silverside beef joint for dinner. It's not my favourite but was on offer. Im going to slow roast it for about 4-5 hours in the oven but wondered if there's anything i can put on it during cooking to enhance the flavours.

For example, i usually brush my lamb with mint jelly and stud it with garlic and rosemary and chicken usually has herbs sprinkled on it. gammon has mustard and brown sugar but not sure if thre's anything i can put on the beef to compliment it.

Roughly chop an onion (don't bother peeling), break a large carrot into chinks and ditto some celery - chuck in the bottom of the roasting tin - lay joint on top and add water to cover veg. Turn meat every hour during cooking and if the spirit moves you baste with tin juices.

Mustard is nice brushed over beef. Sprinkle over some fresh thyme if you have it and do as Mosaic suggested, lay the joint on top of some root veg. Add some red wine and Madeira if you have any too and cook slowly.
i think you don't need it, you are making it in a very wonderful way. carry on in the same way.
