Hi does anyone know when your making Rogan Josh, and you have to put Cinnamon Sticks and Cardamon Pods, do you leave them in the Rogan Josh or take them out once its finished cooking, I made this for the 1st time last week and ended up having the little hard bits from the Cardamon Pods & Cinnamon Stick in our mouths, not nice, can someone tell me what to do about this, I was thinking about putting them in a small bag??? I really hope someone can help me as i am doing a dinner party soon and just practicing, he he
I put them in a muslin pouch so I can remove them easily. It's a nightmare getting bits of cinnamon stick and cardamon pod in a mouthful of lovely curry lol
oh I see you've posted this twice so i'm just going to copy & paste it here
you can either go through the curry and pick it all out or warn people before hand to keep an eye for them and take them out themselves.
Next time you do a curry you could place them in a muslin cloth that can easily be taken out later or when you fry them in the oil, take them out after the oil is infused with the flavour (although it's better flavour if it stays all the way through)
any going spare?? i'm doing a lamb hotpot today
One of my favourite Indian restaurants will just leave cinnamon bark and cardamoms in the dish when it's served up. The cinnamon is easy to spot and avoid, as long as you haven't broken it up by vigorous stirring in the pot. The cardamoms are cooked long enough to be soft and give a burst of flavour, which I like, when you bite on them.
