This, in the first of a sporadic series of food post from myself, is something I've found to be a great nibble. If you have some good dips you're well away.

Sweet Potatoe Bread Nibbles

What you need:

Sweet Potatoes
Flour
Butter
Turmeric
Salt & Pepper
A little oil

1. Skin, chop and boil your sweet potatoes
2. Drain, add butter liberally. Add salt and turmeric. Mash.
3. Begin to add flour and mix in. Keep adding flour until the mix becomes slightly doughy. It should no longer be sticky to the touch and have a little stretch in it.
4. Roll your dough into balls.
5. Heat a little oil in a frying-pan.
6. Add the sweet potato balls to the pan and add salt and pepper. Gently fry until they're warmed through with a bread-like outer-crust.
7. Serve!


I've had them with mayo and garlic butter - anyone out there god some good dipping ideas?

I love sweet potato. There's no effort in cooking it and you barely have to chew when eating it. How lazy do I sound?

Sounds Lovely Ed. I love sweet potatoes! I would dip them in aioli rather than garlic butter. Much more moorish!! And what's more they sell it in Morrisons now, imported from Spain and really very good.
Just wondering if I chopped up sweet potato and added it to my ingredients in the bread maker what would happen. I make do some experimenting. Could then be toasted or fried in a little oil! mmmmmmmmmm - have to see!

I'll let you know Pasta. I have a yearning for it now, toasted and dipped in aioli!! Will try it this evening on a quick bake setting with some country grain flour. x
Might also be nice with a chunk of mature cheddar and some nice pickle/chutney!

Well, I did do it as potato bread to being with, turning them into "nibbles" was only so I could get more in the pan!

They're absolutely amazing.

Having a beer, watching The Wire, sitting with loved ones AND eating these things is a GOOD THING.
