Turkey behaviour/chicken breed

At a farm a turkey raised and rattled it's feathers when kids approached -is this a turkey sign of defensive /threatening behaviour? , is it scared , or something else?
Also what is the breed of white chicken that is plump and has distinctive white fluffy legs?

the turkey is threatening.....it's the breeding season. Keep kids away as poultry go for eyes.
