Fish pie

Got fish pie for dinner tonight....white fish fillets, smoked haddock fillets and prawns, hard boiled eggs, holandaise and cheese sauce, maybe some peas, sweetcorn, onions and mushrooms, mash potato on top, then grated cheddar.

How do you make yours....any secrets or tips ?

Same as mine, but hold the mushrooms!!

I don't like mushrooms in a fish pie.

Ive put slices of smoked salmon in before.

soak up a bit of f4nny batter on some bread and put it in the oven. 30 minutes later.

I always add some dijon mustard which gives it a nice bite.
well, i've got to say, i never put onion, mushrooms or sweetcorn in mine.
i always keep a bit of the sauce seperate for serving as it always soaks up too much!
I sometimes but crushed plain crisps or couscous on the top for a crunchy topping (just a thin layer)
WOW! i like the sound of your one! i usually make mine with a layer of mash at the bottom then a layer of bisto's cheese sauce then fish mixture,layer of mash and then a layer of bisto's parsley sauce! try that on your one and you'll never look back!
4 sachets of cod in butter sauce, 2 large handfulls of prawns, a load of frozen peas, as much pasta as you fancy. cook all the above as directed and put into an oven proof dish, perhaps adding some cream, yoghurt, milk or butter to make it a bit more sloppy. grate some cheese, mix with some breadcrumbs and sprinkle over the top. bake in the oven until it's brown-ish.
not quite a fish pie but very quick and easy and you can tweak it about by adding/subtracting whatever you have to hand.
just wondering, hammerman, do you cook your fish first?
I always do, but I noticed marco Pierre White didn't on the great british menu.

Yes....i've only done it once before and i poached the fish in milk in the oven. It was gorgeous. The fish was also fresh.

This time, i have frozen fish but it will be poached again in milk from frozen

some excellent ideas....i always have a "basic" recipe for stuff like this or curry or lasagne etc but always like tweaking it or making it a bit different hence the sweetcorn and mushrooms !!!.
Depends if you are using smoked fish or plain,the best for me is a mix of the both, using the milk that has been used for poaching to make a basic sauce, some people use a parsley sauce others a cheese, it depends on what you like i love them both, no mushrooms or sweetcorn that isnt a classic fish pie,making sure the fish isnt overcooked, and a decent size bite,quarters of hard boiled egg, and peas if you desire,loads of lovely creamy firm mash, fantastic!!!!
