sadly steve dont think there is a ultimate recipe, as most things everyone has a different varation, i have used a brian turner recipe, that i find quite good, take a standard mug, equal measures of eggs, plain flour, and milk and water, salt and a splash of vinegar, put flour in bowl pinch of salt, make a well in the middle gruadually add eggs, then milk/water and a splash of vinegar, try to get as much air into the batter, then put in fridge to rest, put oven on high maybe 220degress, mean time put small bits of lard or dripping into the yorkshire puds tin, put in oven till the fat starts to smoke, pour batter in tin, and return to the oven for about 20, 25 mins, less time if it is a fan oven, even better if you have a see thru oven can see them rising, dont open the door until at least the 20mins, and then check how they are, good luck!
