As chorizo is dried and preserved meat, how long would it be safe to keep it for, stored in the fridge? I bought some organic, unwrapped ie unsealed chorizo recently at a county fayre but don't want to poison myself by thinking I can keep it for months. Can I?

Keeping it in a fridge will dry it out, over here in Spain we usually keep it in a larder, unless it is sliced, if so then wrap in clingfilm and it will keep in a fridge for well over a month, it'll just get harder rather than mouldy.
i've used it after being in the fridge unwrapped after months, its cured and has a high fat content so not prone too bacteria
