Jam making. For every 450 grams of strawberries I need 400grams of sugar.
How much sugar do I need for 1700grams of strawberries?

My short answer would be : until it tastes right

Strawberry jam is fairly difficult to get it to set. Hence, getting the fruit to sugar ratio correct, chippy.
It's the pectin that gets it to set. The sugar is the preservative that stops it going off

I stand corrected. Strawberries are low in pectin.
Don't do what I did. Slice the strawberries and wash them. I couldn't understand why the jam didn't set and it turned out that the washing of the strawberries caused them to absorb too much water. I won't do that again.

I've had to wash them as they were dirty with mud from the allotment. There was also some additional protein from the slugs etc :-)
