I have a nice crop of courgettes coming on well in the garden and I'm looking for quick and simple ways of cooking them.
Literally from plant to plate in minutes.
Nothing complicated please!

Fritters! A bit of fresh mint, some chilli, Feta cheese grated courgette all bound together in a batter and fried. Serve with a zingy salsa or soothing tzatzike.

Agrodolce, a delicious sweet and sour combo.

Cut lengthwise, scoop out the seeds and stuff with finely chopped fried onion, garlic pinenuts, mint and Feta top with breadcrumbs and grated parmesan.

Simply griddled with a drizzle of aged balsamic vinegar.

As part of a warm salad with a tahini dressing.

Tempura and dipping sauce of choice.

Go well in a parmigiana melanzane but it does take a fair bit of prep.
Grated and then sauté in butter.
I've made lemon and courgette cake in the past - Google for recipes!

It's also nice grated on salads.
microwave at 800W for 1.30mins.

I made lemon and courgette risotto last year and it was wonderful. Ratatouille uses them up too.
