Mature Cheddar, every time.
Good strong Mature Cheddar.....Stale and hard if possible.

Too much oil in it when Fresh and too soft when packed in plastic film.

A good idea is to wrap some Cheddar in kitchen paper and leave it in the fridge for a week or so to draw out surplus oil.
