Page 1, Line 1 of the crossword book states that FLIGHT= STAIRS but I can't parse it.

Stairs - "apples & pears" - Cockney (East End) rhyming slang

Stairs (apples and pears, etc)
Perhaps just worth (or not) reminding ourselves that cockney slang for 'stairs' is 'apples' and not 'pears'. Rhyming slang works by dropping the actual rhyming word. This would have made it harder for outsiders to understand. So, for instance, rhyming slang for 'curry' is not 'Ruby Murry', it is just 'Ruby'.
