My local branch of Lidl stocks Emmental cheese in 250g vacuum-wrapped blocks.
Given that this cheese is full of holes, of widely varying size and distribution through the block, how do the manufacturers know that the piece they're cutting is exactly 250g?

They probably don't. They simply know that the weight will be in a range of, say, 250g to 260g. As long as the actual weight isn't below the specified one they won't be contravening the labelling regulations.
Just think, if it was full of black holes they would weigh more than the cheese. (^_*)
LOL @ Togo.
It's emmentalary my dear Watson....

Probably an average weight stated on the packet. Maybe, like the traditional"Baker's Dozen", it could average slightly over to ensure they stay legal.
