I keep using till it smells or is lumpy, one day over wouldn't bother me a jot.
I stop using it when it either smells bad or curdles my brew.

smell it! should still be ok - I wouldn't use it but I am not mad keen on milk to start with so if its close to its date I just dump it!

No...I adhere to the "use my common sense" approach to milk....and most everything else.
I often use milk after the best before date. Not died yet.
I think use by date 1. Covers producer if you use it later and get ill and 2. Makes people worry - chuck it and buy more.
I use my nose. If something smells ok it usually is. And no matter how old I am yet to eat gone off yogurt. Seems to last forever.
I've used semi skimmed up to a week after the sell by date. Smelled fine, tasted fine.
I've started buying milk in pints. A little bit more expensive but I bung them in the freezer.
