Freezing Herbs And Chillis

I know you can physically bung fresh herbs and chillis into the freezer but does it affect their taste, potency?

It doesn’t affect the woody herbs, but I find it does the softer ones...You can add the softer ones to a decent oil and freeze it as cubes which, I understand, helps to preserve them.

Chillis no difference at all. In fact they are easier to chop when frozen.

I chop herbs and freeze in an ice cube tray with a tiny bit of water. Once frozen I put them in a freezer bag. Taste exactly the same to me. Obviously no good if you want to sprinkle herbs on top of a dish.
I just chuck all fresh herb surpluses into a plastic bag. Then, when frozen, a quick scrunch gives you chopped herbs. Simple

homedeeth I buy the little birds eye chillies and thread them all up and hook them up in my kitchen - they look so pretty. Use till they are all gone; they will be dry by the end but I just snip what I want off with scissors. The dried seeds are pretty potent.
I dislike the taste of frozen herbs. As for me, it has a taste of ... freezer. Or maybe I have a bad freezer :-). But potency is the same.

Sunflower, I don't use chillis everyday so if I did what you suggest (hang them up) won't they go soft and horrible
