Hi all

A bit of help needed please.

Serving up venison wellington - my own recipe but a bit stuck on the method.

I need to seal the venison steaks but do I then chill them before adding the haggis and mushrooms and wrapping in pastry?

I would chill them once they had been assembled to let the pastry rest. I would only sear the meat, cool, assemble, chill and then cook for however long the pastry needs.

I would at the very least let them cool as if they are hot they will melt the fat in the pastry.

OK Thank you daft question I know but if I chill them will they take longer to cook in the pastry? So letting the pastry cook and keeping them medium in side?
