My parents, who are in their 80s, are going on holiday within the UK (Northern Ireland) and they already have travel insurance with Easyjet. What they were wondering is if there is an insurance they could take out that would help them if one of them was taken ill and the other had to stay longer, or if one of them died and the other would be able to stay longer then get home. That sort of thing. Is there such a thing?

I doubt there is such a thing, but they could look into getting a better and more comprehensive insurance than the one from Easy Jet, which may only be very basic.
Have a look at the Post Office travel Insurance, or perhaps give someone like Saga a ring. If you go ahead and get another insurance I'm pretty sure you have to cancel the first one, but you can ask the second insurer if you go ahead.
