Hi toby,
I have used VOIP for sometime and think it is fantastic, I have a dedicated phone server in my place (asterisk/freePBX) with about 20 extensions on it all over the world so friends, family, family of friends etc etc can all call each other for free anytime.
The only fault I've been able to find is some of the hardware phones are a little temperamental, I got 5 grandstream gxp2000 phone a short while ago and 2 of them crash very often. although the one that do work are great and I've heard other brands are more stable.

Toby, I live in Spain and use VOIPBUSTER which I think is a German company. Local calls give irritating echo reception, so much so that I don't use it. International calls however are superb in quality and in price. SMS via Voipbuster are unreliable to the extent that I always use Clickatell. Emailing or texting Voipbuster is a waste of time, as you never get an answer. I ave no experience of Skype. Hope this helps.

I use the my Orange Livebox to make phone calls to Holland continually from the UK. I'm pretty sure this is VOIP technology just the same. The quality can be rubbish sometimes, there is often a hissing noise in the background and sometimes it just doesn't connect. However, it's completely free and saves me a fortune so I'm sticking with it.

but if your connection is slow .... or the contention ration is large... you can have problems... depending when you try.
My home hub line is not bad .... I have a business one from work ... and it's rubbish during the day ...(surprise - everyone is using it) but quite good at night
just don't make it your only phone

Thanks AcetheTROLL - we were thinking of it as our main telephone system in a business - think may have to reconsider!
