The word kop originally means "Hill" (in south africa) and was just a term that got applied to the slopes of the terraces at a few football grounds

lot's of football grounds had a kop - some bigger than others. It was used to describe a steep bank and it refers to Spion Kop where a famous battle was fought in the boer war. As sft42 correctly states - kop is Afrikaans for hill.
