The total pay out at wimbledon 2017 was £31.6m

Where does the club get the money from - obviously it can't be from gate receipts .
Is it made up from sponsorship and other business interests ?

I would guess you're right, the many sponsors and TV rights etc.

I note that the total prize money was increased by some millions this year .

Why do they need to ? i'm sure there is no player that would refuse to play in the tournament , because there was not an increase in prize money
In 2016 Wimbledon fortnight produced an income of £203million, up from £180million in 2015.

Ticket revenues brought in around £50m.
Suppliers and sponsors, around £40m.
ESPN broadcast rights, around £25m.
Other foreign broadcasters, around £25m.

Which leaves around £60m from the BBC coffers.
Last year's competitors complained that the post-Brexit fall in the value of the Pound hit the value of their earnings (USD equivalent), so this year's winnings were increased to factor in the continuing shortfall.
