In the modern (19th and 20th Century) RC church, women covered their heads as a sign of respect when in church. A mantilla was often worn but a headscarf or hat was acceptable. In the very early church women would have had long hair which may have fulfilled the requirement. Equally as a sign of respect, men had to have their heads uncovered when in church. Contrast this with the orthodox Jewish practice of head covering.

Because god, like allah, can't stand to see women's hair.
The Yanks, on the other hand, can't stand women to have hair anywhere else But on the head.
