In the modern (19th and 20th Century) RC church, women covered their heads as a sign of respect when in church. A mantilla was often worn but a headscarf or hat was acceptable. In the very early church women would have had long hair which may have fulfilled the requirement. Equally as a sign of respect, men had to have their heads uncovered when in church. Contrast this with the orthodox Jewish practice of head covering.
