Why is there such a variety in human appearance.

White, black, Chinese etc all look different, why ?

If you think humans look so different, consider dogs.
I remember seeing a programme that showed babies could tell the difference between individual baboon faces, but lose the ability as they get older as they don't need it.
Humans are just selective that way. In one part certain features and preferred and those with them more likely to mate, in another part a different set of features are preferred.

A partner that looks healthy is a big plus, so the local environment will play a part.

I don't think many other species choose exactly the same way. For many species the big thing is simply which male can beat up all the others and then take tge females. For other species, once the female has bred males to have some 'show off' characteristic that highlights them to predators, then they're satisfied.

A field mouse looks nothing like a house mouse. Well a bit, but definitely different.
