Poached Eggs

I cannot get perfect poached eggs.I have tried using poachers.
I've placed the eggs in boiling water in a saucepan but the white always
separates.
Someone said I should vinegar to the boiling water.
Any tips please?

If just using a pan of water get stirring and make a cyclone first. Put the egg in it and the forces keep the white around the spinning yolk.


But use the usual poaching pan and the white has to stay in place in the container anyway. Just don't let it bubble over in to the water.
Using fresh eggs will give you your best chance. Then again you may just be rubbish at poached eggs. Some people just are .

put the eggs into the hot water for ten seconds before cracking into a swirling eddy.....
those poaching pans make for an egg where the white is too tough....
A friend showed me and they are perfect every time.
Boil water with a splash of distilled vinegar in it. Break egg into a small dish. Gently tip egg into water from dish. 3 minutes for a medium/large, 4 minutes for a duck egg.
...and by the time the white is set the yolk is hard.
You can use vinegar, three shakes of a vinegar bottle, get a good swirl going with a whisk and crack the room temperature egg into the centre.
A swirling eddy isn't much use when you need six or so eggs poaching.
get yourself a decent sized pan. talbot......
Although a swirling eddy is good for a square dance.
Get the pan boiling, swirl the water, drop the egg in, turn the heat down and cover

Thanks for all the great advice but I fear I'm one of those people
described by Talbot who are rubbish.
But.Shoota, that's in Australia: Eddies swirl the opposite way down there.

What has that to do with a swirling eddy?
Perhaps you are trying to poach eggs straight from the fridge?
