95 Minimum Ron

If a cars handbook says petrol of 95 minimum RON , should be used - can you use a higher RON , without having to adjust the ignition timing .

i.e . will the cars ecu or whatever , automatically adjust the timing ?

Yes, when it says minimum RON any RON equal to or higher than that will do.
You may not get any extra benefit from it but it won't be harmful to the engine, where too low RON will.
Most modern engines adjust automatically to the fuel.
