Why during the Olympics do the studio experts wear microphones yet when you watch for instance quiz shows or interviews they do not have microphones

They do - they usually have a wee mic on their lapel.
how do you think we hear them talking???

I would think the reason is, the presenters aren't in a studio, but in an open area overlooking the stadium, therefore a lapel mic would pick up too much ambient sound (the crowd in the stadium).
The hand-held microphones have a foam outer sleeve to cut down on the noice and the presenter can hold it closer, and point it at, their mouths.
Sorry, that should read "noise", not noice.
