Apart from the few oldies stations and Radio 2 occasionally, why is it that the vast majority of radio stations never play anything older than the eighties?

Because people who listen to pre 80s music don't fit the advertisers demographics.
Johnnie Walker has a great "Sounds of the Seventies" Sunday afternoons at 3pm. Plus there is Sounds of the Sixties at 8am Saturday mornings, poor Brian Mathew has not been well though and Tim Rice has been standing in for the last 2 weeks. Both shows are available from the Beeb IPlayer.
Planet Rock play music from the sixties to the present date.
Plus Absolute radio.

Radio 10 is a Dutch commercial radio station principally dedicated to music from the 1960s, 1970s, 1980s and 1990s, and is one of the oldest remaining commercial radio stations of the Netherlands. 88.1 FM
I don't think dave is asking where can he hear pre 80s music, just why it isn't played.

The BBC don't (YET) rely on advertisers to influence product.
Absolute radio do
BBC local radio in the eastern counties Sunday night for 3 hours (Keith Skues) 2200 to 0100, plays stuff from 40's onwards and has a spot for a 78.
