OH has spent time today in her first attempt at strawberry jam-making. She has successfully made blackcurrant (sometimes with apple) and this has worked out fine.

However strawberries are lower in pectin so jam did not set so it was returned to jam pan and re-worked with lemon juice and has now set to a level she is happy with.

However said pan now has a coating of burnt fruit on the bottom (jet black) which will not budge or scrape off without a LOT of effort. Any suggestions for an easier solution?

You could leave it for a few hours,soaking in soapy water.
Could try leaving it to boil with washing powder & water for as long as it takes.
I work in a pro kitchen and we get burnt on pans like this. Put a generous amount of biological washing powder(the sort you use to wash clothes) with water in the pan enough to cover the burn and boil it , then leave to soak overnight.
Rinse out and scrub out the softened burnt jam, you may need to repeat this 2 or 3 times. The washing powder will loosen the burnt material so it scrapes off easily.
If you think jam is hard to remove try a burnt on curry!!!

SODA crystals are the answer and they provide a non-srub method of removal! If you don't have any buy a packet today. They are found in the household aisle at the supermarket by the washing powder and ironing paraphernalia.

Soak the pan in a generous mix of soda crystals and hot water and the burned fruit will all soften up. Empty, repeat, leave to soak until its all gone.

Eddie - Bio washing powder contains enzymes that digest the proteins in foodstuffs. Boiling kills off the enzymes, meaning you end up with a non-bio wash.
I am always burning pots and I swear by a dishwasher tablet,just soak for a few hours in warm water.
Do not use washing soda if the pan is Aluminium it will etch it.
And next time, try using jam sugar - it has pectin added to it, and gives a good set without too much boiling.
