i will be staying with my gf / fiancé and i get on with her entire family
At 16 years old you have the legal right to walk out of your home and, if you so choose, never to have any contact with your parents again. If your parents reported you as 'missing', and the police found out where you where, the police could tell your parents that you were OK but (unless you gave your permission) they could not reveal your whereabouts to your parents.

Wouldnt think their will be a issue nill..

thanks soo much everone my gf/fiancé will be chuffed i missed her birthday last year cos my mum is very controlling and they dont get on i would hate to miss another
However, if your parents are very unhappy about your leaving home then it could be putting your girlfriend's parents in a difficult position.
Are you engaged at age 16 then?
Are you in education, claiming benefits or working? I'm wondering who will feed and clothe you.
