I had a very small piece of silverside on sunday it only weighed 450g. On the back of the packing it said cook on gas 5 for 20mins and 20 mins over up to 500gm in weight. My husband insists I alwas cook my meat too long, I like to cook it on gas 3 for a lot longer time. Anyway I let him cook it ,as per instructions, and it was the toughest piece of meat I have ever tried to eat. Infact we couldnt eat it. He wants me to cook it my way next time.!!

Roasted it in a gas oven. I know a small piece like that is better pot roasted but he doesn't like it.
Thats maybe were you have gone wrong,silverside does not roast well, i would have braised in beef stock surrounded by suitable veggies!!!

Thankyou for your reply. I usually cook it so long it really is tender but what do you think is the best cut for only a smaill piece of beef to roast.?
Cant Beat a nice piece of topside,i dont like to cook my beef to long or it will dry out, and there is a resting time!!!
And as i have said before do not cover in oil,just place some water at the bottom of the tray and top up as needed bon appetite!!!
I even boiled a small beef joint recently for about an hour(as I would for gammon) and then roasted it in very hot oven for 25 mins just to brown it (as I would gammon) lovely and tender.
I think a Rib joint is the best for quick roasting. Yum.
Silverside and brisket need pot roasting - absolutely ideal for slow cookers.
Agree with Loftylottie Rib of beef has the best flavour - usually find it so tender
