I do a fair bit of baking and I'm often asked by family, friends and colleagues to make a cake for little celebrations.
I made a couple of Ferrero Rocher cakes recently, a cherry almond bakewell, a courgette and pistachio cake, a toffee apple crumble cake and I'm even considering making a gulab jamun inspired cake. The most recent thing I baked was a carrot and parsnip cake.
However, for me, you just can't beat a nice Victoria sponge with fresh cream and jam. No other country in the world can make a cake to compete with that, imo.
My other half is the baker in this house, it's too faffy and precise for me.
Yesterday he made a chocolate and beetroot cake, which is lovely but not my favourite. He made a carrot cake last month, again, it was very nice but not my first choice.
However, his lemon and poppyseed cupcakes are to die for. I'm currently trying to find a recipe for a large one rather than individual cupcakes, not lemon drizzle but just like the cupcakes.
They're my favourite, I love lemony things.
Thanks NoM.
While browsing the sainsburys recipe site, I've come across one called a carnation lemon drench cake, with poppyseeds in it and using condensed milk and ground almonds. Himself fancies making that so that's next weeks cake sorted :)
