compared to buttercream... how do the shops make there fresh cream sponge fillings a thick more solid layer?....

My Mum used to add sugar to double cream and whip it. Always seemed a good thick layer of cream.
I think that they add some icing sugar to thicken the cream
Just whip it for a couple of seconds longer (be careful it doesn't turn into butter). It will thicken up
My wife says that LyndaB's answer is correct, and my wife is a good baker(ess).
