Mini tartlets or quiches.

Cheese and onion twists.

Mini cheese and onion toasted sandwiches (make as normal then cut into quarters).

Onion rings with cheese dip.

Other veggie ideas are spring rolls or samosas and veggies with dips.

Sundried tomatos will give them a lovely extra kick as well :)

You could do stuffed veg too, hollowed out tomatos, the top of flat mushrooms, peppers, potato skins. All would go nicely with cheese and onion.

Roasting some veggies in olive oil (eg pepper, onion, courgette, aubergine, mushrooms, vine tomatos etc...) in and making kebabs out of them makes lovely finger food.

You could also experiment with different kinds of cheese. Melted brie and mushrooms is delicious and you could use soft cheese as well on mini water biscuits.

Gently fry some finely chopped onion in a little oil or butter and then mix with some seasoning, mashed potato and grated cheddar cheese. Roll out some ready made puff pastry (it's too much effort to make this yourself, when the ready made variety is so good) and cut into either squares or rectangles. Place a tablespoon of the cheese, onion & potato mix on the pastry and either roll up into a sausage roll shape or fold up into triangles, pinching the edges together. Brush with a little beaten egg and bake in a hot oven until golden brown (about 15 minutes). You could also sprinkle the outside of these with some grated parmesan and smoked paprika - before baking - for that *something*!

A variation on this that is very popular round here is to fry up some onion, garlic & fresh chillies (all finely chopped) in a little oil or butter, then mix in some mashed potato and chopped cooked vegetables and use this instead of the cheese, potato and onion mix. They come out a bit like little curry puffs and are very tasty without being too spicy.

Grate some onion, mix with cheese, any cheese and a little flour.

Add some tabasco.

Roll into balls, flatten and fry on a high heat for cheese and onions fritters, takes 15 mins from start to finish.
