Parsnip chips - maybe not in as large a portion as ordinary chips but they're nice.
I'd never had a parsnip until I was 40 odd - my then girlfriend did me a roast and I had to ask her what it was.

try boiling them with your spuds then mashing together with plenty of butter ,can be served as part of meal or a topping for cottage pie delicssssss.

carrot and parsnip mashed together is great. cube the same quanties of both, boil then mash with salt and pepper, delicious.

Roast parsnips are absolutely wonderful. The best part of Christmas dinner (together with the sprouts of course!!)

o my fave veg -I mash them with potatoes or turnip as warpig said and they are just so yummy wished I had got some today at Tescos as I have been to the dentist -temporary crown so only mashy food for a fortnight lol

Not going to wait Smudge. Have decided to have a roast on Sunday with all the trimmings! Parsnips though taste better after the first frosts!!

Well Lottie, seeing as you've put me in a tasty festive mood & that we didn't have a roast on Sunday, I think I'll surprise my husband & start one off!
I'm nipping to the shops soon, so will pick up what I haven't got for it! ;o}

Parsnip & Ginger Soup.
2 carrots, 2 sticks celery, 2 med. onions, 800g parsnips, thumb size piece fresh root ginger, 2 cloves garlic, olive oil, 2 chicken or veg stock cubes, salt & pepper, fresh corainder to garnish.
Peel, & roughly chop all the veg, ginger & garlic. Put into a pan containing 2 tablespoons olive oil & cook for 10 mins. Make 1.8L stock with the cubes, and add to the pan. Bring to the boil then simmer for 10 mins. Blend or liquidise until smooth. Serve & garnish with the fresh coriander.

Sounds delicious. I might try that, but not with corriander as I just don't like corriander.

The coriander is purely for garnish, so leave it off.

how about sweet potatoes ? what could i do with them ? any ideas anyone?

Sweet potatoes are great baked in the oven, just like jacket spuds. Make sure you prick them all over first or they will explode.
Here's a couple of recipes of mine.
Sweet Potato & Apricot Pancakes
6 pancakes (make your own or buy them)
2 large sweet potatoes, 4oz dried apricots, butter, honey, cinnamon, soured cream.
Soak the apricots overnight then bring to the boil in enough water to cover the & simmer til tender. Drain the apricots, keeping the water. Chop up the apricots. Peel & cut up the sweet potatoes, cover with the apricot water, bring to the boil then simmer until tender. Mash the sweet potatoes with a little butter then add a dollop of honey & cinnamon to taste. Mix with the apricots. Put a heap of the mixture onto each pancake & roll up. Heat through and then serve with a drizzle of honey & soured cream.

Sweet Potatoes in Orange Sauce
1.5lbs sweet potatoes, 1oz butter, 6 thinly sliced spring onions, juice of 2 oranges,grated zest of 1 orange, 1 tablespoon cornflour, quarter pint veg stock, quarter teaspoon ground cinnamon, half an ounce of sugar, salt & pepper.
Place whole sweet pots in a pan of boiling water & cook for 30 mins. Leave to cool then peel & cut into even size slices. Make the orange sauce by melting the butter, adding the spring onions & fry for 5 mins. Put half the orange juice in a bowl and blend in the cornflour & cinnamon. Stir in the remaining orange juice and stock in with the onions. Bring to the boil then stir in the orange juice/cornflour mixture. Simmer & stir til the sauce is smooth. Season to taste. Mix the potato slices in the sauce and then serve.
This dish goes brilliantly with duck.

I love baked sweet potato - they don't need quite as long as a normal potato, they can be cooked in about 45mins ina moderately hot oven.
