left over veg

I seem to have accumulated quite a lot of veg, which needs using up.Any of you brilliant people out there got any inspirational recipes to use it up, other than soup. Thanks a bunch! By the way, Im not a veggie, so it can include meat,and I will be frying some up for breakfast in morning.

Gary Rhodes Colcannon: boil & mash spuds. Meanwhile, blanch shredded kale or cabbage in boiling water for 2-3 mins until soft. Fry chopped leeks or onion in butter until soft, add drained kale/cabbage & cook for a FEW minutes more. Mix all with salt, pepper milk or cream & ground mace. Any left over can be kept in fridge & fried as patties.

Hi beattie, Why not make a veg curry? Just lightly fry your veg,add some Pataks curry paste,stir on a low heat for 10=15 mins and hey presto a quick curry. Serve with rice and poppadoms or naan bread.

Fritatta - fry up onions courgettes peppers peas beans sliced cooked potatoes garlic - all or any of them and anything else you fancy a bit of chilli is nice - but you need the onion and the spud. Add beaten eggs seasoning and when the bottom is cooked put the whole lot under the grill or in the oven until firm - if you are not a veggie then crispy bacon, or spicy sausage like chorizo or franfurters go well and some cheese on the top - yum - going to make one now !
