Buy frozen cooked prawns. Only need to defrost and warm gently, or add to hot food, then they wont go rubbery. Or......
Put 1tbs olive oil in a bowl. Add juice of half a lemon, a pinch of salt and quarter tsp english mustard. Mix well and add the prawns. It sounds strong for prawns, but is delicious! I use it for salads.

If you want variations on normal mashed potato:

Olive oil and roasted garlic

Horseradish

Crispy bacon and sauteed leeks

Chilli, olive oil and basil

Pesto

Dijon/wholegrain mustard

Mashed sweet potatoes with a dollop of creme fraiche

Potato rosti

roasted sweet potato

and loads more on uktv food's website too

How weird! There was no sign that my answers were going through. Apologies for the repetition. Had to "turn it off and on again".
