90th party

I am having a 90th party for my Mum.We are having hog roast,(not the whole pig, but rolled boned legs of pork) beef and ham, salads , little potatoes, rolls. Can anyone help with amounts for 150 people for the salads . Its just basic salad ingredients, nothing fancy. Iceberg lettuce, sliced tomato and onion, cucumber, grated celery, etc.
I am ok with the amounts for the meat. Many thanks in advance.

Delia is good with portion control. Also 'Good Housekeeping'magazine. I once did salads for 70 people and managed to get it right via Good Housekeeping. Maybe you could 'scale up' to the amount required. Good Luck. And I hope the weather is kind!
