FAO sleepyj - potato salad

This is my recipe for potato salad, it's yummy & very popular with everyone. I'm asked to make this at BBQ's

1lb New potatoes, skin left on, cut into bite size pieces & boiled until tender - I prefer chanterelle or something similar.
4 - 6 tablespoons mayonnaise (add more if required)
bunch spring onions - finely sliced
1-2 teaspoons english mustard from a jar (to taste)
4 hard boiled eggs chopped
1 teaspoon dried mixed herbs
salt
pepper

mix all of the above and keep in the fridge until required. Can be made day before, goes great with home made coleslaw too.

Well, whichever sort of potato or mushroom you are using, it sounds really good - I'd not have thought of putting hard boiled egg in potato salad ! If I may make a small suggestion though, use fresh herbs (say chives and parsley or even coriander) instead of dried ones, unless you soak the dried herbs in a little warm water first to rehydrate them.

Hey Juggle - hope ur ok. I tend to find that you can end up with too much fresh herbs which can overtake the taste but in small amounts I'm sure it's fine. Dried herbs are fine as they'll absorb the mayonnaise.
Potato salad with hard boiled eggs takes it to another dimension!!!!

sounds gorgous i've never put eggs in, i usually add crispy bacon cut into little bits, i think i'll give the eggs a try as well

i'm feeling delicate today, overdid it on the ole sunshine drinking yesterday, so i need comfort food any ideas - nothing complicated, i've managed toast and soup so far

Don't know about you but in this heat I don't feel like eating much anyway, maybe a little pasta salad or rice salad?

drink plenty of fluids though - no that's not permission to drink more alcohol LOL - hope you feel better soon& plenty of suncream madam!!!! (no it's not mum!!!)

i always add chopped up gurkins(in sweet vinegar) to my potato salad - no matter how big i make the salad there is never enough!!!
