If I refrigerate my potato salad immediately, how many days do I have to safely eat it? In other words, how long is it safe to keep and eat potato salad that has been refriegerated?

If it has mayo and/or hard boiled eggs in it - I would think you would be safe eating it for 3 or 4 days at least.

I'd happily eat it the next day, but am not sure I'd really want to face it after that although it would probably be safe to eat for another 24/48 hours provided the fridge temperature was set at 5 degrees or less.
